SIMLPE SALAD with TAHINI DRESSING


This simple salad pares well with rice dishes, and if you have falafel on hands, you can put together the “bestest” sandwich, wrap or pita pocket ever.

SIMPLE SALAD with TAHINI DRESSING
Ingredients for dressing:
½ cup tahini
½ cup water
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder
½ tsp paprika
¼ tsp chili powder
1 tsp lemon juice

Directions for dressing:
Into a bowl, put all the ingredients but water. Stir to combine.

Gradually start adding water, 2 tbsp at a time, mixing after each addition, until you use all the water. You will have smooth, dense dressing. Cover with plastic wrap and set aside.

Ingredients for salad:
2 medium tomatoes
4 banana peppers
2 tbsp finely chopped parsley
1 tbsp finely chopped mint leaves

Directions for salad:
Dice tomatoes and banana peppers, add parsley and mint, and stir to combine.

Add simple salad to the tahini dressing and stir to combine.

TIP 1: I’m using banana peppers, because I grow them in my garden. You can surely use your favorite kind of pepper.

TIP 2: Tahini dressing pares wonderfully with grilled meat. Just substitute onion and garlic powder for fresh onion and garlic. Follow the above directions, leaving out onion and garlic powder. Grate the onion and squeeze out the juices, finely grate garlic, add them to tahini dressing, and stir to combine. Now you have a new addition on your picnic table.
