DRY GREEN PEA SOUP

Each time I cook with beans or peas a certain saying comes to my mind: “Beans, peas, good for your heart, the more you eat the more you “fart”!” My youngest was in 5th grade and they were discussing healthy eating habits in the classroom, so their teacher, Mr. B., recited this little humorous saying for them. And as you can imagine, we had full ears of it for quite some time! And still, it pops to my mind each time I see beans or peas!


Dry green pea soup turned out super delicious. My husband even made a remark that it should be in a competition. He is a man of few words when food is involved (except if my culinary attempts are a failure!?), so it had to be really good! Yay!!! The only mental note I made was: Patience is a virtue which I have in normal quantities and would rather use it on other matters than passing puréed green peas through the sieve. Like maybe not getting upset if shoes cannot find their way into the shoe closet upon arrival home! So next time I’m definitely buying split dry green peas!

DRY GREEN PEA SOUP

Ingredients:
2 ½ cups dry green peas, soaked over night and cooked until soft
½ cup green peas, frozen
5 small carrots cut into circles, cooked in 1 cup of water and 1 tbsp Vegeta until soft
½ cup of rice, cooked in lightly salted water “al-dente”
¼ tsp nutmeg
½ tsp black pepper
1 tsp hot sauce
½ tbsp ginger paste
½ tbsp garlic paste

Directions:
Puree the cooked green peas in a mixer until smooth. Pass the smooth green pea mix through the fine sieve to remove the shells.
Transfer the pea puree to a pot and add 1 cup of water. Bring to a boil over medium heat. Make sure you stir frequently to prevent sticking to the bottom of the pot.

After it comes to a boil, add carrots with the water they been cooked into, nutmeg, black pepper, hot sauce, salt, garlic and ginger paste, stir, and cook for 5 minutes. Now it’s time to add pre-cooked rice. When it comes to a boil again (it will take about 3 minutes), add frozen peas, stir, taste, add salt if needed, remove from heat, cover, and let it sit for few minutes before serving.

  3. Oh how I remember that saying... Actually I remember that saying everytime my Hubby eats beans... haha!! This looks great, I just love your decorations on the soup! Beautiful!
