The love holiday is almost over, but that doesn't mean that we'll forget to share this lovely feeling in the days to come. In Nashville, we had a day filled with warm sunshine, which gave me a special boost after all the snow and cold we had last week. Yes, it was a wonderful day :) I baked this cake yesterday beacuse my daughter wanted to share a special treat with her friends and teachers. I hid two pieces for my husband and me and we enjoyed them with our coffee this morning.
SNODDAS (from "Sju Sorters Kakor" Swedish Cookbook)

Ingredients:150 g unsalted butter, soft
2 eggs
3 dL sugar
2 teaspoons vanilla
2 tbsp sifted cocoa powder
4 ½ dL all-purpose flour
2 teaspoons baking powder

1 ½ dL milk
Glaze:75 g unsalted butter
4-6 tablespoons strong cold coffee
2 tbsp sifted cocoa powder
2 teaspoons vanilla
3 ½ dL powdered sugar
Garnish:1 cup sweetened coconut flakes
5 drops red food coloring
Directions:

Directions:
Melt the butter and let it cool. Beat eggs and sugar until fluffy. Add the dry ingredients alternately with the milk and melted butter. Pour batter into a greased and floured baking pan, 20 x 30 cm.
Bake the cake on the middle rack of the oven for 25 - 30 min.
Let cake cool. Meanwhile, melt the butter for the glaze. Add the other ingredients while stirring.
Spread glaze on the cake. Cut the cake into square pieces.

Into a small bowl put coconut flakes and drop food coloring over. mix with your hand to evenly distribute the color. Sprinkle each piece with colored coconut.
I also piped some melted semi-sweet chocolate over the top.

ReplyDeleteWe were warm here in Indianapolis, too...so nice to trudge through slush to the mailbox instead of ice skating! Mateja, what a fabulous snack cake!!! Beautifully decorated...I could just take a spoon and scoop off that gorgeous icing! Hope you had a wonderful Valentine's Day :)
