TWICE BAKED POTATO

Potatoes are so versatile, one can cook them practically in every way: fried, baked, boiled, ... and this star ingredient can be served as a main dish, side dish, appetizer, snack, sweet or savory. You choose your way and I assure you, you won't go wrong!

TWICE BAKED POTATOES (feeds 4)
Ingredients:8 medium potatoes
1/2 cup finely chopped onions
1/4 cup finely chopped peppers, any kind
1 large garlic clove, grated
1/2 cup of your favorite cheese
1/3 cup sour cream
1/4 cup milk
2 tbsp butter, soft
1 tbsp finely chopped parsley
1 tsp salt
1/2 tsp black pepper
1/4 tsp ground turmeric
2 tbsp olive oil


Directions:Scrub your potatoes well and dry them off. Bake them at 425*F for 45 minutes. Check if they are done by inserting a knife into the potato; if the knife slides in easily the potatoes are done.

TIP: You can bake your potatoes in the microwave. Just follow the settings for your microwave. You will save yourself at least half an hour.


Pull the potatoes out of the oven and let them cool for 10 minutes, so you can handle them easily. Remove top skin and scoop out potato meat in a bowl and mash them.

Add salt, pepper, ground turmeric, garlic, sour cream, cheese, onion, parsley, and peppers then mash to combine.

You can stop here and serve the mashed potatoes as a side dish, or you can continue to make the potatoes more uplifting.

Spoon the potato mix back into the potato skins, smother the potato skins with olive oil, and place on a baking sheet.


 Sprinkle some more cheese over the top and bake for 15 minutes in a 425*F preheated oven.

Serve in your favorite way and indulge!
