ELBOW MACARONI SALAD with BASIL-GARLIC MAYO DRESSING


As promised, here is my fresh, easy, quick pasta salad that can be ready in as little as 15 - 20 minutes: in the time elbow macaroni are cooked, veggies can be diced and dressing whipped together- Bon appetite!

ELBOW MACARONI SALAD with BASIL-GARLIC MAYO DRESSING

Ingredients for salad:
2 cups cooked elbow macaroni
1 large tomato, diced
1 medium cucumber, peeled and diced
1/2 green bell pepper, diced
1/2 cup sliced black olives
2 scallions, sliced to circles

Directions:
Put all the ingredients into a large enough bowl and toss to combine.

Ingredients for basil-garlic mayo dressing:
1/2 cup basil-garlic mayo
1/2 cup sour cream
2 tbsp sweet&hot deli mustard
1 tbsp lemon juice
1/2 tsp paprika
1/4 tsp black pepper

Directions:
Put all ingredients into a large enough bowl and stir to combine, pour over the elbow macaroni veggie mix, and stir to combine.

Ingredients for topping:
shredded Roman lettuce
fresh blueberries
fresh strawberries
