Crepes filled with ganche- PALAČINKE

Crepes in my home country, Slovenia, are called palačinke (palachinke). So even my children don't use any other name for this delicious treat. I still make them just like I learned from my mother years and years ago.

When I was little, we usually had fish or veggie minestrone on Fridays. Palačinke, crepes, were the ultimate Friday dessert after a nice hot bowl of veggie minestrone. We filled them with home made plum jam or with Eurocrem (hazelnut, chocolate and milk sweet spread, known here as Nutella). Palačinke are also the first dessert that my sister and I ever made on our own. I can’t really remember, but I think she was 12 and I was 10 at that time. And after that there was no stopping us! My children also appreciate palačinke very much and they are often a guest on our dessert table; especially when we have a quick urge for something delicious yet special.

This time we filled our palačinke with chocolate ganche and served them with a scoop of black berry cordial ice-cream.


Everybody in our family prefer palačinka to be rolled, because they are easier to handle that way: you just grab one and sink your teeth to indulge.

CANDIED ORANGE PEEL

It’s orange season! In our family we all love oranges; they are not just good for you, they are sweet and sour, juicy and delicious! But what about the orange peel? Throw it in the garbage? Not in our house. Orange peel can be a base for a delicious orange preserve or candied orange peel that you can nibble on or put in cookies, cakes, even as decoration in a tea cup or cocktail glass. Or you can give them away as a gift of appreciation to someone dear to you, a neighbor, or a teacher.
The possibilities are endless!

CHOCOLATE COVERED CHEESECAKE CUBES

Who doesn't love cheese cake!? There is nothing like cutting into that perfect piece with your fork and savoring every bite! Cheese cake cubes are the perfect dessert to serve when you are having friends over. They can be prepared a day ahead (even though I do not recommend that, there won't be any left for your guests) and they are easy to handle. There is no cutting, no mess, no nothing, they are ready to serve. Just take them from the container and plate. They are also a great picnic dessert because, once again, they are ready to serve. Which leaves you more time to spend with your friends and takes one thing off the "to do list" on the day of the event!
