How to make kids eat more grains? Put them into their favorite soup and they will gulp them down as if they won a first prize! And this soup is so easy to prepare yet so delicious and eye appealing with that dollop of sour cream and soup crackers on the top...who can possibly resist to dig in?

¾ cup barley
4 cups veggie stock
2 8 oz. cans tomato sauce
3 tbsp tomato paste
1 small onion, chopped
3 garlic cloves, chopped
1 potato, diced
3 carrots, diced
2 tbsp olive oil
black pepper
½ tsp sugar

Add barley to lightly salted boiling water and cook over medium heat until soft, about 30 minutes. Set aside.

Cook potatoes and carrots in veggie stock until juts tender. Set aside.

Into a big enough pot over medium heat, put olive oil, onion, and garlic, and sauté with a pinch of salt and a dash of black pepper until soft. Add tomato sauce, tomato paste, and sugar. Stir and cook until it starts to bubble. Add veggie stock with potato and carrots and cooked barley. Stir and simmer for 10 minutes. Taste, add salt if needed, and serve with soup crackers and a dollop of sour cream.

  4. Mmmm... Reminds of a similar soup I make. Love barley in soups, especially tomato based ones. Just adds a nice texture and depth to it. Looks delicious!

  7. You know, that's a good idea. I'm just starting to get my five year old to eat more soups. He's still a little unsure. But I try to make it with a grilled cheese sandwich too. Good idea about the barley in there. Will definitely try it! :)

  8. What a simple, yet wonderful, and comforting soup, Mateja. I love barley, in vegetable soup, but never thought about putting it in tomato soup, which I also love so much. Yummy! Love the combination of the two. Photo of it is lovely, as well!

    As per your question:LOL, no, I did not get one of those fun frilly little skirt scarf, but all my 3 little granddaughters did, and showed off with it. The lady on the photo, had such a fun time dancing w/out her shoes, on the dance floor. Such a fun event, so many people came!
