PIZZA DOUGH

We have sun in Nashville now for a few days and it feels amazing!!! I was so happy to see my mint all grown and bright green, and it smell so fragrant and fresh. Yea, I think I can for sure say: "Goodbye winter, sorry but I won't miss you a bit!"

As I promised, here is my pizza dough. Everybody has favorite pizza topping, we love ours veggie style. This time: broccoli, spinach, mushrooms, onions, dry cured black olives, pizza sauce, and shredded mozzarella cheese.

SCRAMBLED OMELET

This was an easy and quick prepared dinner after a busy day. I'm starting to feel little sad for not having enough time anymore to spend as much time in the kitchen as I would like to :(

I made one large scrambled omelet and share it with my daughter, but you can make smaller individual ones.
We enjoyed our scrambled omelet with toasted pita wedgies an dry cured black olives.

BAKED NOT FRIED

Simple cakes that are not fried but baked in the oven. I usually fry zucchini cakes on the stove top in an inch of oil, but this time, being in a hurry I decided to just pop them into the oven, so they'll be all done at the same time. No frying, no oily mess, and with aluminum foil covering the baking sheet, no pan washing either!

And after the zucchini cakes were a success, I decided to try tomato-onion cakes the same way! This recipe is easy, quick, no mess, and the variations are endless!

RICE&LENTILS

For me rice and lentils is that fulfilling dish on a day I don't want to have meat on the table.

Lentils are often called "the poor ones meat". Why? Answer is simple: Lentils are rich in protein, with over 25% of lentils nutritional value being protein. This is what makes lentils the most popular and inexpensive source for protein, especially for those, who cannot afford meat and for vegetarians. And yet another benefit of lentils: Lentils fiber content may also prevents the sudden hike in blood sugar levels after a meal.

But there is nothing poor about lentils. They are versatile as a cooking ingredient for you can make a soup, a casserole, or even meatballs with them. They are rich in taste: they have that pleasant nutty taste, and become creamy and soft when cooked. So for those with heath resolutions for the new upcoming year, I would definitely recommend more lentils on their plates.
