Stuffed Baby Zucchini

It's been so long ago since my last post.
Yesterday I found some wonderful baby zucchini in the international store that were perfect for stuffing.

First, remove the pulp from zucchini and wash the cavity.

Than stuff them with spiced up rice and ground lamb.

Cook them in tomato soup until rice inside is tender.

Serve stuffed zucchini with a bowl of tomato soup on the side.

Enjoy the deliciousness with family!

DRY GREEN PEA SOUP

Each time I cook with beans or peas a certain saying comes to my mind: “Beans, peas, good for your heart, the more you eat the more you “fart”!” My youngest was in 5th grade and they were discussing healthy eating habits in the classroom, so their teacher, Mr. B., recited this little humorous saying for them. And as you can imagine, we had full ears of it for quite some time! And still, it pops to my mind each time I see beans or peas!

Dry green pea soup turned out super delicious. My husband even made a remark that it should be in a competition. He is a man of few words when food is involved (except if my culinary attempts are a failure!?), so it had to be really good! Yay!!! The only mental note I made was: Patience is a virtue which I have in normal quantities and would rather use it on other matters than passing puréed green peas through the sieve. Like maybe not getting upset if shoes cannot find their way into the shoe closet upon arrival home! So next time I’m definitely buying split dry green peas!

RICE&LENTILS

For me rice and lentils is that fulfilling dish on a day I don't want to have meat on the table.

Lentils are often called "the poor ones meat". Why? Answer is simple: Lentils are rich in protein, with over 25% of lentils nutritional value being protein. This is what makes lentils the most popular and inexpensive source for protein, especially for those, who cannot afford meat and for vegetarians. And yet another benefit of lentils: Lentils fiber content may also prevents the sudden hike in blood sugar levels after a meal.

But there is nothing poor about lentils. They are versatile as a cooking ingredient for you can make a soup, a casserole, or even meatballs with them. They are rich in taste: they have that pleasant nutty taste, and become creamy and soft when cooked. So for those with heath resolutions for the new upcoming year, I would definitely recommend more lentils on their plates.

Eggplant Stew - YEKHNAT AL-BATINJAN

Today was one of those days when I couldn’t decide what to cook. Who should I please, children or the head of the family? At the end I decide to please my taste buds and went veggie style: eggplant and rice.
